Pistachio Pancakes
Tender pancakes are studded with delicious green pistachios.
Ingredients
1 cup (140 g) all-purpose flour
2 tablespoons brown sugar
1 tablespoon baking powder
1½ teaspoons baking soda
1 cup (250 ml) reduced-fat buttermilk
1 teaspoon vanilla extract
2 tablespoons canola oil
2 egg whites, lightly beaten
3 tablespoons chopped pistachios

Method
Preheat a large nonstick skillet or griddle. Stir together flour, brown sugar, baking powder and baking soda in a medium mixing bowl. Beat in buttermilk, vanilla, oil and egg whites. Add chopped pistachios. Lightly spray skillet or griddle with vegetable cooking spray. Pour ¼ cup (60 ml) batter for each pancake. Cook 2 to 3 minutes or until bubbles appear and surface looks dry. Turn; cook 2 to 3 minutes, until browned.
