Baked Mixed Vegetables
When preparing roast beef, add this dish to the oven during the last minutes of cooking the meat.
Ingredients
1 (16-ounce/450-g) package frozen mixed vegetables
1 cup (250 ml) low-sodium beef broth
½ teaspoon dried leaf basil
½ teaspoon dried leaf tarragon
2 teaspoons chopped fresh parsley

Method
Preheat oven to 350°F (175°C). Combine all ingredients in a shallow baking dish. Bake, covered, about 20 minutes, stirring occasionally. Serve hot or cold.
