Garlic Baked Potatoes

Make ahead, cover and refrigerate until ready to reheat.

Ingredients

3 medium baking potatoes
¼ cup (55 g) plain nonfat yogurt
½ cup (115 g) nonfat cottage cheese
1 tablespoon chopped fresh chives
1 tablespoon garlic paste
2 teaspoons chopped fresh parsley
4 tablespoons grated low-sodium Parmesan cheese

Method

Preheat oven to 425°F (220°C) and bake potatoes about 1 hour. Remove from oven and lower oven temperature to 375°F (190°C). Slice potatoes in half lengthwise and carefully scoop out pulp, leaving shells intact. Place shells on a baking sheet. In a large mixing bowl, mash potato pulp with yogurt, cottage cheese, chives, garlic paste, parsley and 2 tablespoons Parmesan. Fill potato shells, mounding mixture. Sprinkle with remaining cheese and paprika. Bake 15 to 20 minutes or until heated through.
