Czech Cheesecake
Ingredients
½ cup butter
½ cup granulated sugar
3 eggs, separated
½ cup cottage cheese, rubbed through a strainer
1 cup ground nuts
⅓ - ½ cup breadcrumbs
Jam
Grated chocolate
Nuts
Method
Cream butter with sugar and egg yolks thoroughly. Blend in cheese and nuts. Fold in stiffly beaten egg whites and breadcrumbs. Butter a spring form pan and sprinkle with breadcrumbs. Spread the cake mixture over the crumbs. Bake in a preheated 320 degree F oven for about 30 minutes.
When cake is cool, spread with jam and sprinkle with grated chocolate and nuts.
