Good Luck
Ingredients
25 cm (10 inch) round fruit cake, covered with almond paste
1.7 kg (3 lb 12 oz) ready-to-roll fondant icing
Cornish cream, purple, yellow, blue, green, pink and black food colouring
YOU WILL ALSO NEED
30 cm (12 inch) round silver cake board
Small leaf cutter
Curved icing crimpers
Method
1 Put the cake on the cake board. Colour 1.1 kg (2½ lb) of the fondant Cornish cream. Roll out and cover the cake. Trim the base. Colour 225 g (8 oz) of the fondant purple. Roll out thinly and cut out a large horseshoe. Make nail holes in the horseshoe, then leave to dry.
2 Divide 225 g (8 oz) of the fondant into 8. Leave 1 piece white. Colour the remaining pieces pale yellow, yellow, pale blue, blue, pale green, green and pink. Cut out the leaves and shape the petals. Reserve the green and pink trimmings. Using a little water, fix the flowers and leaves to the horseshoe and cake sides. Fix the horseshoe on the cake with a little water.
3 Colour the remaining fondant black. Shape the cat's head, body, legs and tail as shown, right. Use a little of the reserved green fondant for the eyes and pink for the nose. Assemble, using a little water. Fix on top of the cake in the middle of the horseshoe.
4 Using icing crimpers as shown below, mark a decorative pattern in the icing around the top edge and base of the cake.
