Mandarin Pecan Slices

Ingredients

375 g (13 oz) plain flour, sifted
250 g (9 oz) caster sugar
3 teaspoons baking powder
75 g (3 oz) butter
2 eggs, beaten
170 ml (6 fl oz) milk
198 g (7 oz) can mandarins in natural juice, drained and roughly chopped
100 g (4 oz) pecan nuts, roughly chopped
Finely grated rind of 2 oranges
2 teaspoons ground cinnamon

Method

1 Grease and line a 30 x 20 cm (12 x 8 inch) Swiss roll tin.

2 Stir together 325 g (12 oz) of the flour, 225g (8 oz) of the sugar and the baking powder.

3 Melt 50 g (2 oz) of the butter and stir in the eggs and milk. Pour the liquid into the flour mixture and stir until smooth. Do not beat.

4 Fold the mandarins, pecan nuts and grated orange rind into the cake mixture. Pour the mixture into the prepared tin.

5 Rub together the reserved flour, sugar, butter and the cinnamon, and sprinkle over the cake mixture. Place in a preheated oven, 180˚C (350˚F), Gas Mark 4, for 40 minutes, until golden or until a skewer inserted into the centre comes out clean. Leave to cool in the tin, and then slice into 16 pieces.
