Orange Salad
Ingredients
5 oranges
2 large potatoes
1 beetroot
2 bananas
1 lettuce heart, shredded
8 tbsp mayonnaise
Salt
Freshly ground white pepper
2 tbsp finely chopped parsley

Method
Cut open 4 of the oranges by making zigzag incisions into them. Scoop out the flesh. Cook the potatoes and beetroot, peel and finely slice. Slice the bananas, and chop the flesh of the remaining orange. Place all the ingredients in a bowl and stir in the mayonnaise. Season with a little salt. Fill each of the orange skins with the mixture and serve on a bed of shredded lettuce, sprinkled with finely chopped parsley.
