Mashed Potato And Meat Croquettes
Ingredients
1.5 kg/ 3¼ lb potatoes
45 g/ 1½ oz flour
1 egg, beaten
2 tbsp finely chopped parsley
1 tbsp grated cheese
Salt
Freshly ground black pepper
½ tsp grated nutmeg
Filling:
100 g/ 3½ oz lard or butter
1 onion, peeled and finely chopped
1 tomato, skinned, seeded and chopped
100 g/ 3½ oz minced veal
100 g/ 3½ oz raisins
1 hard-boiled egg, shelled and chopped
Salt
Freshly ground black pepper
1 tsp sugar

Method
Cook the potatoes in boiling, salted water. Peel when cool and mash, adding the flour and then the egg, parsley and the grated cheese and season with salt, pepper and nutmeg.
Filling: Melt the lard or butter in a frying-pan and fry the onion until lightly coloured. Add the tomato and veal and allow to fry for a few minutes before adding the raisins and chopped egg. Season with salt and pepper and the sugar. Stir well.
Dust your hands with flour to prevent sticking. Take a tablespoon of the potato mixture and flatten it in the palm of your hand. Put a teaspoon of the filling in the centre and seal it by closing your hand to form a ball.
Dust with flour and fry in a light oil.
