Mushrooms Au Gratin
Ingredients
100 g/ 3½ oz butter
450 g/ 1 lb button mushrooms, trimmed
Juice of 1 lemon
1 onion, peeled and finely chopped
Salt
1 tbsp flour
200 ml/ 7 fl oz milk
75 ml/ 2½ fl oz cream
1 egg folk
30 g/ 1 oz cheese, grated

Method
Melt half the butter in a large saucepan. Add the mushrooms, lemon juice, onion and a little salt. Cover and cook over low heat for 20 minutes.
Make a Béchamel sauce by cooking the flour in all but 15 g/ ½ oz of the remaining butter, adding the milk gradually and stir constantly to keep it smooth. Cook for 8 minutes, remove from the heat and add the cream.
Return to the heat and cook for a few more minutes, stirring. Remove, add the egg yolk and season with salt.
Drain the mushrooms thoroughly, place in an ovenproof dish and pour over the sauce. Sprinkle with the grated cheese. Melt the remaining butter and pour over. Place under the grill to brown for a few minutes.
