Liver With Oregano
Ingredients
8 slices bread, crusts removed
2 tbsp oil
500 g/ 1 lb 2 oz lamb's liver, chopped
2 tsp oregano
Juice of 1 lemon
Salt
Freshly ground black pepper
1 tbsp finely chopped parsley

Serves: 4
Method
Cut the bread into small pieces. Heat the oil in a frying-pan and cook the liver in for 2 minutes. Add the oregano and lemon juice, season with salt and pepper, turn down the heat and simmer for 10 minutes. Sprinkle with the parsley and serve on the bread.
