Ingredients
12 pairs frog's legs
Salt
Freshly ground black pepper
Juice of 1 lemon
100 g/ 3½ oz flour
2 eggs, beaten
Oil for frying

Serves: 4
Method
Trim the frog’s legs and marinate for 2 hours in salt, pepper and lemon juice. Dust with flour, coat in beaten egg and fry in hot oil.
