Hake Fillets In Curry Mayonnaise
Ingredients
1 kg / 2¼ lb hake fillets, skinned
Salt
30 g/ 1 oz butter
Juice of 1 lemon
1 tsp curry paste
150 ml/ 5 fl oz mayonnaise
8 thin slices of bread

Method
Pre-heat the oven to 180° C/350° F, gas mark 4. Slice the hake into small pieces and season with salt. Butter a baking dish, arrange the hake in it, squeeze over some lemon juice and bake in the oven for about 10 minutes. Allow to cool completely. Stir the curry paste into the mayonnaise and use to dress the fish. Serve on the bread.
