Easy Chocolate Hazelnut Fudge
Ingredients
150ml/ ¼ pint / ⅔ cup evaporated milk 350g/12ozI1½ cups sugar
Large pinch of salt
50g/2oz/ ½ cup hazelnuts, halved
350g/12oz/2 cups plain chocolate chips

Method
1 Generously grease a 20cm/8 inch square cake tin.
2 Place the evaporated milk, sugar and salt in a heavy-based saucepan. Bring to the boil over a medium heat, stirring constantly. Lower the heat and simmer gently, stirring, for about 5 minutes.
3 Remove the pan from the heat and add the hazelnuts and chocolate chips. Stir gently with a metal spoon until the chocolate has completely melted.
4 Quickly pour the fudge mixture into the prepared tin and spread evenly. Leave to cool and set.
5 When the chocolate hazelnut fudge has set, cut it into 2.5cm/ 1 inch squares. Store in an airtight container, separating the layers with greaseproof paper or nonstick baking paper.
TWO-TONE FUDGEMake the Easy Chocolate Hazelnut Fudge and spread it in a 23cm/9 inch square cake tin, to make a slightly thinner layer than for the main recipe. While it is cooling, make a batch of plain fudge, substituting white chocolate drops for the plain chocolate chips and leaving out the hazelnuts. Let the plain fudge cool slightly before pouring it carefully over the dark chocolate layer. Use a palette knife or slim metal spatula to spread the plain layer to the corners, then set aside to set as before. Cut into squares.
