Ingredients

6 large oranges with thick peel
1˝ kilos of sugar
3 cups of water
1 teaspoon of lemon juice
Vanilla

Details

Cooking time: 60 minutes


Method

Grate the rind of the oranges with the fine side of a grater and wash well. Boil the oranges whole. They are ready when you jab them with a toothpick and it doesn't stick. Drain them and cut each one vertically into four, then cut each orange again so that you get eight sections.


Remove the white pith with scissors and take out any hard parts; allow to strain. Boil the sugar with the water and when it thickens, add the oranges. Con­tinue boiling till the juice has thickened well. Add the lemon juice and the vanilla shortly before removing from heat.

Variation: Sweet orange conserve can also be made with the peel of orange only. In this case, you don't need to cut the orange into sections; instead, you roll up the peel and tile with string and boil like this. You remove the string once the peel has thickened with boiling.
