Chocolate Peanut Butter Swirls

Who doesn't adore the classic combination of chocolate and peanut butter? These cookies are the absolute ultimate in taste and appearance for this wonderful duet.

Ingredients

Chocolate Dough

6 tablespoons butter, at room temperature
cup Splenda
teaspoon powdered white stevia
1 large egg
1 teaspoon vanilla extract
1 ounces unsweetened chocolate, melted
1 cup almond flour
teaspoon baking soda
teaspoon coarse salt

Peanut Butter Dough

cup Splenda
cup creamy natural peanut butter
2 tablespoons butter, at room temperature
2 tablespoons almond flour

Method

Preheat oven to 350 degrees F. Line a baking sheet with a piece of 1I parchment paper. Set aside.


To make the Chocolate Dough, put the butter in the mixing bowl of an electric mixer and beat on medium-high speed until creamy. Add the Splenda and stevia and beat for 3 minutes. Add the egg and vanilla and blend. Add the melted chocolate and blend well, scraping down the sides of the bowl with a rubber spatula as necessary. On medium­low speed, gradually add 1 cup almond flour, baking soda, and salt and beat until smooth, scraping down the sides of the bowl.


To make the Peanut Butter Dough, put all the ingredients in a clean mixing bowl and beat until smooth.


To make the cookies, divide the Chocolate Dough in half. Place each half in a separate bowl. Set one bowl aside.


Drop rounded teaspoonfuls of Chocolate Dough onto the prepared baking sheet, 2 inches apart. Drop a scant teaspoonful of Peanut But­ter Dough on top of each cookie and then top each cookie with a tea­spoonful of Chocolate Dough remaining in the bowl that was set aside. Using the tines of a fork dipped in Splenda, flatten each cookie. Bake for 15 minutes.


Remove the baking sheet from the oven and place it on a cooling rack. Cool completely. Store the Chocolate Peanut Butter Swirl cook­ies in an airtight container in the refrigerator.
