Chicken Fried With Rosemary Garlic
In this simple recipe the chicken pieces are cooked in garlic and fresh rosemary, a light and tasty combination that is good hot or cold. This dish is ideal for picnics
Ingredients
1 chicken, medium-sized, jointed into 8 pieces (thighs or legs)
Salt and pepper to taste
2 tablespoons olive oil
6 cloves garlic, peeled and sliced
Handful of chopped fresh rosemary leaves

Method
Season the pieces of chicken with salt and pepper to taste. Heat the oil in a heavy-based frying pan over medium heat and fry the chicken pieces in the oil for approximately 15 minutes until fairly brown and crispy. Make sure you turn them from time to time so that they are evenly cooked and browned all over.
Add the garlic and rosemary to the pan and continue to fry for a further 10-15 minutes. Remove from the pan and serve immediately with sautéed potatoes and vegetables, or allow to cool and serve cold as part of a picnic or summer lunch with Pesto Rice and a dressed green salad.
