Lentil And Grilled Pepper Salad
This attractive and substantial salad is delicious either cold
Or warm. Mixed chargrilled peppers add colour and a strong flavour, which is intensified by the onions and Balsamic Vinaigrette.
Ingredients
250 g Puy lentils
3 peppers: 1 red, 1 green and 1 yellow, deseeded
1 large onion, peeled
1 tablespoon oil
Salt and pepper to taste
Balsamic Vinaigrette
Handful of chopped fresh parsley to garnish

Method
Cook the lentils in plenty of boiling water for 20 minutes, until tender, then drain. Meanwhile, dice the peppers and onion, toss them in warmed oil and grill until the edges become a little charred do not cook through.
Mix the grilled peppers and onion with the cooked warm lentils, season with salt and pepper and dress with Balsamic Vinaigrette. Sprinkle with chopped fresh parsley and serve immediately.
