Prawn And Melon Salad

This splendid combination of fresh prawns, juicy, sweet melon and lively flavourings, makes a salad that is a perfect starter for an outdoor meal on a hot summer evening.

Ingredients

500 g prawns
1 yellow skinned or green skinned (Piel de Sapo) melon
2 sticks celery, chopped
125 ml ready-made mayonnaise
Juice of 1 lemon
1 tablespoon curry powder
1 teaspoon grated ginger
Pinch of cayenne pepper
Snipped fresh chives to garnish (optional)

Method

To cook the prawns, plunge them into boiling water for 1-2 minutes, then allow them to cool. Peel the prawns, leaving their tails on. Cut the melon in half and scoop out the flesh using a melon baller. Alternatively, cut the flesh into cubes. The best melons to use are those with firm flesh, such as Piel de Sapo. Place the melon pieces in a bowl with the cooked prawns and chopped celery.

Make the dressing, mix together the mayonnaise, lemon juice, curry powder, ginger and cayenne pepper. Stir well and pour over the prawns and melon. Mix thoroughly to ensure all the ingredients are evenly coated with the dressing. Allow to stand for at least 15-30 minutes, then divide into 4 portions and serve with snipped fresh chives if desired.
