Roast Potatoes With Rosemary And Garlic

Ingredients

600 g potatoes
4 tablespoons olive oil
Salt and black pepper to taste
2 tablespoons rosemary leaves, chopped
2 cloves garlic, peeled and chopped

Method

Preheat the oven to 220°C, gas mark 7. Peel the potatoes and cut them into 2 cm cubes. Parboil them in salted water for 5 minutes, then drain.

Pour the oil into a large roasting tray and heat it on the stove. Add the potatoes, turning them to ensure they are well coated in oil. Season with salt and plenty of freshly ground black pepper. Sprinkle chopped rosemary and garlic over the potatoes and place the tray in the top half of the oven for 30 minutes until they are brown and crispy all over, turning them once or twice during cooking.
