Mushrooms With Lemons And Thyme

This delicious concoction of mushrooms sautéed with garlic, lemon juice and fresh thyme can be served either as a starter or as part of a main meal with grilled meat or fish.

Ingredients

250 g oyster or button mushrooms
2 tablespoons extra virgin olive oil
2 cloves garlic, peeled and crushed
Several sprigs fresh thyme
Juice of 1 lemon
Salt and black pepper to taste

Method

Wash and trim the mushrooms and slice any that seem too large. Heat the oil in a shallow saucepan and, when hot, add the crushed garlic, the fresh thyme leaves (removed from their stalks) and the lemon juice. Cook for 2-4 minutes over medium heat.

Add the washed mushrooms to the pan and sauté gently for 15 minutes until cooked through. Season with salt and plenty of freshly ground black pepper. Remove from the pan and serve either hot or cold in individual terracotta dishes sprinkled with fresh thyme leaves.
