Lettuce Hearts With Anchovy Dressing
The fresh and clean taste of crispy lettuce hearts contrasts wonderfully with the potency of anchovies in this light salad. The ingredients can be beautifully presented to make an eye catching side dish for special occasions.
Ingredients
2 lettuce hearts (Little Gem)
125 ml olive oil
1 tablespoon white wine vinegar
1 tablespoon ready-made mayonnaise
12 anchovy fillets
Freshly ground black pepper to taste
2 tablespoons chopped fresh parsley
4 cloves garlic, peeled and chopped and fried in olive oil (optional)

Method
Wash and trim the lettuce hearts and set aside. To prepare the dressing, place the oil, vinegar, mayonnaise, four of the anchovy fillets and some freshly ground black pepper in a food processor. Blend the ingredients, then add the chopped fresh parsley. If you do not have a food processor, chop the anchovies finely and place them, along with the other ingredients, in a jar that has a lid. Shake the jar vigorously until all the ingredients are thoroughly combined.
To serve, cut the lettuce hearts into quarters and place two quarters on each plate. Drizzle the dressing over the lettuce hearts. Add a sprinkling of chopped and fried garlic if desired this gives the dish a wonderful richness. Drape one anchovy fillet attractively over each lettuce heart quarter to decorate.
