Salmon Glazed with Dill Butter

3 tablespoons butter, melted
3 tablespoons chopped fresh dill
teaspoon coarse salt
teaspoon freshly ground pepper
4 salmon fillets (6 ounces each), skin removed


Serves: 4


Preheat oven to 500 degrees F. Line a rimmed baking sheet with a piece of parchment paper or lightly coat with a nonstick vegetable spray.

Combine the butter and dill in a small dish.

Season the salmon fillets with salt and pepper. Brush the tops of each with the butter mixture. Bake for 10 to 14 minutes or until the salmon is no longer red when a knife is inserted into the thickest part or when a meat thermometer registers 140 degrees F. (Cooking time will vary according to the thickness of the salmon.)

To serve, place a salmon fillet on each of four dinner plates. Gar­nish each serving with a sprig of dill, if desired.
