Spicy Lamb Chops

Ingredients

2 teaspoons ground cumin
1 teaspoon coarse salt
1 teaspoon ground cinnamon
teaspoon freshly ground pepper
1 pounds lamb chops (loin or rib)

Method

Combine the cumin, salt, cinnamon, and pepper on a plate and blend well.


Rub the spices on both sides of the lamb chops. (If not preparing the lamb chops immediately, cover and refrigerate for several hours or overnight.)


Preheat the broiler, lightly coat a broiler pan with a nonstick veg­etable spray, and place the lamb chops on the pan. Broil, 4 to 5 inches from the heat source, for 7 to 8 minutes on each side or until a meat thermometer registers 150 degrees F for medium-rare or 160 degrees F for medium. Serve immediately by dividing lamb chops evenly and placing them on four dinner plates.

VARIATION:

To grill the lamb chops, place them on a grill that has been coated with a nonstick vegetable spray over medium-hot coals. Cover the grill and cook for 4 to 5 minutes on each side.
