Fruit And Nut Loaf

Maize meal is readily available in supermarkets and can be used to make delicious teacakes, such as this fruit and nut loaf, which keeps well for several days.

Ingredients

Butter for greasing
200 g margarine
200 g sugar
4 eggs, medium-sized
200 g maize meal (or cornmeal)
1 teaspoon gluten-free baking powder 1 teaspoon cinnamon
50 g chopped nuts (any type)
50 g seeded raisins

Method

Preheat the oven to 180°C, gas mark 4. Using butter and baking parchment, grease and line a 11 x 21 cm non-stick loaf tin.

Beat the margarine with a wooden spoon in a bowl until light and creamy. Add the sugar and continue beating, then beat in the eggs, one at a time.

Work in the maize meal, baking powder and cinnamon. Once all of the ingredients are combined, add the nuts and raisins.

Spoon the mixture into the greased and lined loaf tin and gently even out the batter. Place in the preheated oven and bake for 60 minutes. Use the skewer test to ensure the cake is thoroughly cooked.

Allow to cool, then run a knife around the edge of the loaf to loosen it from the tin. Turn out and cut into slices to serve, alone or with butter.
