Porridge

Low chemical, contains gluten, free of egg, dairy, nut and soy.

Wheat, barley, oats and rye contain gluten. If you are intolerant to gluten, be sure to check the ingredients lists of any commercially prepared breakfast cereals. For a low chemical cereal, avoid any with corn, dried fruit, coconut, honey, nuts, flavours and colours.

Ingredients

400 g (4 cups) rolled oats
105 g (1 cup) rice flakes
130 g (1 cup) barley flakes
130 g (1 cup) rye flakes
205 g (1 cup) millet pinch of salt
1 litre (4 cups) water

Cooking time: 20 minutes
Serves: 8


Method

Put the rolled oats, rice flakes, barley flakes, rye flakes and millet in a large bowl and stir together thoroughly. Store the dry porridge mixture in an airtight container until ready to use.

To prepare the porridge for four people, put 280 g (2 cups) of the dry porridge mixture, a pinch of salt and 500 ml (2 cups) water in a saucepan, then stir well. Leave for 5 minutes (this creates a smoother, creamier porridge). Stir the porridge a few times, then pour in another 500 ml (2 cups) water. Bring to the boil over medium heat, stirring occasionally. Reduce the heat to low and simmer, stirring frequently, for 12-15 minutes, or until the mixture is soft and creamy and the grains are cooked.

HINT:- Serve the porridge with your choice of milk or a substitute, such as soy or rice drink, and a drizzle of golden syrup, pure maple syrup or sugar. We have served ours with natural yoghurt and golden syrup.
