Marshmallow Teddy Bear Cake

Low chemical, free of egg, dairy, gluten, nut and soy.

Ingredients

50 g (⅓ cup) powdered gelatine
250 ml (1 cup) cold water
880 g (4 cups) sugar
500 ml (2 cups) boiling water
¼ teaspoon citric acid
2 teaspoons natural vanilla extract

DECORATION

maize cornflour (cornstarch), for dusting
40 g (⅓ cup) maize cornflour (cornstarch)
1 heaped tablespoon pure icing (confectioners') sugar
5 g (½ cup) puffed rice cereal
1 teaspoon carob powder
2 tablespoons pure icing (confectioners') sugar, extra

Method

Sprinkle the gelatine over the cold water and set aside.

Put the sugar and boiling water in a large saucepan. Stir over low heat until the sugar is dissolved. Add the gelatine mixture. Stir until well combined and dissolved. Boil steadily, uncovered, for 15 minutes. Let cool until lukewarm. Add the citric acid and vanilla.

Pour the mixture into the large bowl of an electric mixer. Beat on high speed until white and thick.

Meanwhile, soak a teddy bear mould cake tin in the sink with ice cubes for about 5 minutes. Remove from the sink without drying. Pour the marshmallow mixture into the teddy bear mould. Refrigerate for 1-2 hours, or preferably overnight, until set.

Sprinkle the top of the cake with cornflour, then run around the edge of the tin with a knife dipped in hot water. Slowly and carefully ease the marshmallow out of the tin onto a cake board-you may need to use a spatula to ease the marshmallow out.

Sift together the cornflour and icing sugar, then sprinkle over the cake. Put the puffed rice cereal in a plastic bag, then run a rolling pin over the top to crush the cereal. Use the crushed cereal to make the pattern for the bear's ears, paws, snout and belly.

To make the icing, mix the carob powder and extra icing sugar together, then add a few drops of water until you have a spreadable consistency. Spoon into a piping bag, then pipe on the eyes, nose and mouth. Decorate with a ribbon, if desired.

Cooking time: 20 minutes
