Potato And Leek Pizza
Low chemical, free of egg, dairy, gluten, nut and soy.
Ingredients
450 g (3 cups) soy free, gluten free plain (all purpose) flour
2 x 7 g sachets dried yeast (4 teaspoons)
1 teaspoon ground sea salt
1½ tablespoons canola oil
250 ml (1 cup) warm water
Canola oil, for greasing
TOPPING
2 tablespoons canola oil
2 leeks, halved lengthways, washed and thinly sliced
3 garlic cloves, crushed
3 (600 g/1 lb 5 oz) white-skinned potatoes, peeled and thinly sliced
ground sea salt
2 tablespoons finely chopped fresh chives

Method
Sift the flour into a large bowl. Add the yeast and salt. Make a well in the centre and add the combined oil and water. Use a wooden spoon to mix until almost combined. Use your hands to mix into a soft dough.
Turn the dough out onto a lightly floured surface and knead for 1-2 minutes, or until smooth. Place the dough in a lightly oiled bowl. Cover the bowl and set aside in a warm place for 1 hour, or until the dough has doubled in size.
Use your fist to punch the dough down, then knead until it returns to its original size. Lightly grease two 27 cm (11 in) pizza trays. Divide the dough into two portions. Roll out one portion on a lightly floured surface to ft the tray, then carefully place the dough onto the tray. Repeat with the remaining dough.
Preheat the oven to 240°C (475°F/Gas 8). For the topping, heat 1 tablespoon of the oil in a large non-stick frying pan over medium heat. Add the leeks and garlic and cook, stirring often, for 8-10 minutes, or until the leeks are very soft. Remove from the heat and set aside.
Meanwhile, steam or microwave potato slices until almost tender Transfer to a plate lined with paper towels. Spread half of the leek mixture over each pizza base. Arrange the potato slices in a thin layer over the leeks. Sprinkle with salt and brush with the remaining oil. Bake for 20-25 minutes, swapping the trays around once, or until the potatoes and dough are golden. Sprinkle chives over the pizzas and serve.
