Sugar Glazed Potato
Low chemical, free of egg, dairy, gluten, nut and soy.
Ingredients
500 g (1 lb 2 oz) small, old white-skinned potatoes, peeled and chopped
2 tablespoons canola oil
2 tablespoons sugar
Ground sea salt

Preparation time: 15 minutes
Cooking time: 20 minutes
Serves: 4
Method
Bring a saucepan of water to the boil. Cook the potatoes for about 10 minutes, or until just tender; drain.
Heat the oil in a shallow frying pan large enough to fit the potatoes in a single Iayer.Add the sugar and stir over low heat until golden brown. Add the potatoes and cook until evenly coated with the glaze and heated through. Shake the pan regularly to prevent the potatoes sticking to the pan and the sugar burning. Sprinkle with salt and serve.
HINT:- Potatoes taste and look great with this caramel coating-an excellent accompaniment to any baked meat.
