Christmas Eve - Greek Style Fish

1 lb (900 g) fish fillets, such as cod, haddock, herring, etc.
3 carrots
1 celery root
1 leek
Fresh parsley
˝ onion
2 tbsp cooking oil
6 oz (170 g) tomato paste
1 tbsp lemon juice or vinegar
Bay leaf
Salt and pepper


1.   Thaw the fish fillets, salt and pepper them, and fry them on both sides in cooking oil. Set aside.

2.   Peel the carrots and celery root and grate them on the medium grating slots.

3.   Finely chop the leek, parsley and onion. Mix all of the vegetables together.

4.   In a skillet or pot, heat the cooking oil, put in the chopped and grated vegetables along with two tablespoons of water, and sauté, covered, on medium heat until soft. At the end, add the tomato paste, lemon juice, paprika, bay leaf, salt and pepper, and stir everything, sautéing for a few more minutes. Set aside the vegetables to cool.

5.   Cover the bottom of a glass dish with half of the fish fillets, add a layer of the vegetables on top, add a second layer of fish fillets, and top with the rest of the vegetables. 

You can serve this dish cool or warm. To serve warm, fry the fish and sauté the vegetables at the same time in separate skillets and serve immediately, or follow the recipe above, grease the glass baking dish before layering the fish and vegetables, and warm up in the oven.
