Golden Syrup Slice

Low chemical, free of egg, dairy, gluten, nut and soy.

The amounts of chemicals present in a particular food may not be enough to cause a reaction straightaway. However, because one substance may be common to many different foods it can accumulate in the body and eventually cause a reaction.

Ingredients

Makes about 24 pieces

Canola oil, for greasing
495 g (3 cups) rice flour
1½ teaspoons bicarbonate of soda (baking soda)
350 g (1 cup) golden syrup
125 ml (½ cup) canola oil
345 g (1½ cups) soft brown sugar
185 ml (¾ cup) warm water

ICING

185 g (1½ cups) pure icing (confectioners') sugar
½-1 teaspoon citric acid
cold water

Cooking time: 45 minutes


Method

Preheat the oven to 180°C (350°F/Gas 4). Lightly grease a 20 x 30 cm (9 x 12 in) balking tin, then line with baking paper.

Sift the flour and bicarbonate of soda into a bowl. Put the golden syrup, oil and sugar into a saucepan. Stir over low heat until the sugar dissolves, about 3-4 minutes. Allow to cool.

Add the syrup and warm water to the dry ingredients. Stir until well combined. Pour into the prepared tin. Bake for 45 minutes, or until golden. Allow to cool in the tin for 5 minutes before turning onto a wire rack to cool completely.

For the icing, sift the icing sugar into a heatproof bowl. Add the citric acid and enough cold water to malke a stiff paste. Place the bowl over a saucepan of simmering water. Stir until thin enough to spread. Spread the icing over the cold slice. Once set, cut into slices.

HINT:- This slice has a light but very moist texture. It is best eaten the day after it is made.
