Vanilla Cookies
Low chemical, free of egg, dairy, gluten, nut and soy.
Ingredients
125 g (½ cup) dairy free margarine
80 g (⅓ cup) caster (superfine) sugar 1 teaspoon vanilla essence
150 g (1 cup) soy free, gluten free plain (all-purpose) flour
75 g (½ cup) soy free, gluten free self-raising flour

Method
Preheat the oven to 170°C (325°/Gas 3). Line two balking trays with sheets of baking paper.
Beat the margarine, sugar and vanilla essence in the small bowl of an electric mixer for 1-2 minutes, or until well combined. Sift the flours into the margarine mixture. Use a wooden spoon to mix until well combined. Use your hands to mix to a soft dough.
Shape tablespoonsful of the mixture into balls and place on the prepared trays. Use a fork to flatten the balls until about 1 cm (⅜ in) thick. Balke for 12-15 minutes, swapping the trays around once, until light golden.Transfer cookies to a wire rack to cool.
