Sausages Stuffed with Truffle Cheese


6 sweet Italian sausages (approx. 1 lb/680 g)
3 oz/85 g caciotta al tartufo or other truffle cheese, shredded
Crusty loaf of bread, for serving

Preheat the oven to 400°f/200°c/gas 6. Lay the sausages out on a baking sheet/tray. Roast for 20 minutes, or until the internal temperature on a thermometer reads 150°f/65°c. Remove from the oven and let cool completely. Create a pocket in each sausage by cutting a slit that goes halfway through down the middle two-thirds of the length. Using your fingers, carefully pry open the pocket, being careful not to open it too wide, and stuff some of the shredded cheese inside. Distribute the cheese evenly among the sausages. Heat a gas grill/barbecue to medium-high heat or build a medium-hot fire in a wood/charcoal grill/barbecue. Cook the sausages cheese-side up, for 10 to 12 minutes or until the sausages are crispy and the cheese is melted. These sausages can also be prepared on the stove in a large sauté pan or flat-top griddle; cook the sausages over medium-high heat until they are crispy and the cheese is melted. Serve hot with a good crusty loaf of bread.
