Cheese Stuffed Pork Tenderloin

1 pork tenderloin, pounded flat
6 tbsp shredded cheddar cheese
4 tbsp cream cheese
2 slices cooked and crumbled bacon
2 tbsp frozen chopped spinach
2 green onions, chopped
tsp minced garlic
2 tbsp finely chopped mushrooms
1 cup dry bread crumbs
tsp dried parsley
Salt and pepper, to taste


Serves: 2


1. Preheat the oven to 350 degrees F.

2. Grease a baking sheet; set aside.

3. Combine the cheddar, cream cheese, onions, mushrooms, spinach, garlic and bacon.

4. Season with parsley, salt and pepper.

5. Spread this mixture on one side of the pork tenderloin.

6. Roll it up around the filling.

7. Coat the tenderloin in bread crumbs.

8. Bake for about 1 ½ hours.

9. Cut it in 3 and serve with preferred side dish.
