Fresh Fruit Salad

When peaches and strawberries are out of season, use bananas and grapes, or any other fruits.

Ingredients

2 peaches
2 eating apples
2 oranges
16-20 strawberries
30ml/2 tbsp lemon juice
15-30ml/1-2 tbsp orange flower water
Icing sugar, to taste
A few fresh mint leaves, to decorate

Method

Blanch the peaches for 1 minute in boiling water, then peel away the skin and cut the flesh into thick slices. Discard the stone.

Peel and core the apples and cut into thin slices. Peel the oranges with a sharp knife, removing all the pith, and segment them, catching any juice in a bowl.

Hull the strawberries and halve or quarter if large. Place all the fruit in a large serving bowl.

Blend together the lemon juice, orange flower water and any orange juice. Taste and add a little icing sugar to sweeten, if liked.

Pour the fruit juice mixture over the salad and serve decorated with a few fresh mint leaves.
