Ingredients

315 ml (10 fl oz/1¼ cups) claret
125 ml (4 fl oz/½ cup) olive oil
2 tablespoons green peppercorns, ground
2 tablespoons coriander seeds
Eight 2.5 cm (1 in) thick sirloin steaks, trimmed
Coriander sprigs, to garnish
Lightly salted, whipped cream, to serve, if desired

Method

In a large bowl, mix together the claret, olive oil, ground peppercorns and coriander seeds.


Prick the steaks deeply, then immerse them in the marinade and leave for at least 2 hours.


Barbecue the steaks on a rack over hot coals. Initially grill for 1 minute on each side to seal, then continue cooking, turning steaks occasionally and basting frequently with marinade until cooked as desired. As a general rule, a rare steak will require 3-4 minutes on each side; a medium steak 6-7 minutes and a well-done steak 8-10 minutes. Garnish with sprigs of coriander and serve plain or with a spoonful of lightly salted, whipped double (thick) cream, if desired.
