Spelt-Walnut Bread

Ingredients

FOR 1 LOAF:

2 teaspoons (10 ml) sugar
1½ cups (375 ml) lukewarm water
4 cups (1 l/500 g) spelt flour
2 (¼ oz/7 g/2¼ teaspoons) envelopes active dry yeast
2 teaspoons (10 ml) salt
1 teaspoon (5 ml) ground cardamom
½ cup (125 ml/60 g) chopped walnuts 2 tablespoons (30 ml) walnut oil

Method

Dissolve sugar in water, sprinkle yeast over and let stand for 10 minutes, or until frothy. Put the flour in another bowl, make a well in the center and pour in the yeast mixture. Stir in the salt, cardamom, walnuts and oil, adding water as needed if dough is too stiff. Knead until smooth and elastic. Let stand in a warm place, covered, for 30 minutes.

Oil a 10 x 6-inch (25 x 15 cm) loaf pan. Knead the dough once more on a floured work surface, shape into a loaf and place in the pan. Leave to rise for 20 minutes.

Preheat the oven to 350°C (180°F). Place a pan of hot water in the bottom of the oven. Lightly brush or spray the bread with water and bake for 40 minutes.
