Tomato Water
The ultimate slimming soup, this is also highly refreshing and light and well worth the effort. Presentation is everything here: the basil should float elegantly around the small tomato dice.
Ingredients
1kg (2¼lb) ripe but firm vine tomatoes, roughly chopped
1 tablespoon Worcestershire sauce
1 teaspoon Tabasco sauce
½ cucumber, cut into chunks
300ml (10fl oz) Evian water
1 teaspoon salt
3 plum tomatoes, seeded and diced
6 basil leaves
Method
Blend all the ingredients, except for the plum tomatoes and basil, in a liquidiser. Pour the pulp into jelly bags and allow to drip through, preferably overnight. Do not force through as it will cloud the liquid. Chill until ready to serve.
Garnish each bowl with diced tomato and some chiffonade of shredded basil. Pour the tomato water over and serve immediately.
