Thai-Inspired Melon Salad

As this is a salty salad, keep the rest of the day’s intake low.

Ingredients

2 garlic cloves, crushed
1 tablespoon liquid honey
2 teaspoons nam pla (Thai fish sauce)
Juice of 2 limes
1 tablespoon grated lime zest
2 red chillies, finely diced
175g (6oz) cooked and shelled shrimp or prawns
50g (2oz) unsalted roasted peanuts
1 Galia or Ogen melon, peeled and chopped into 2.5cm (1 in) dice
4 tablespoons chopped coriander leaves
1 tablespoon chopped mint leaves

Serves: 4


Method

In a large bowl, combine the garlic, honey, nam pla, lime juice, lime zest and chillies. Fold in the shrimp and peanuts. Add the melon and stir to combine.

Garnish with chopped coriander and mint. Chill until ready to serve.
