Ham Crescents

Ingredients

FOR 12 CRESCENTS:

FOR THE PASTRY:

1 mealy (floury) potato, cooked the previous day
1⅔ cup (400 ml/200 g) coarsely ground whole wheat flour
⅔ cup (150 ml/150 g) low-fat quark or puréed cottage cheese
2 tbsp (30 ml/30 g) soft margarine
1 small egg
Pinch nutmeg
Salt

FOR THE FILLING:

1 bunch green (spring) onions
2 oz (60 g) lean smoked ham
2 tbsp (30 ml/30 g) margarine
1 tbsp (15 ml) flour
2 tbsp (30 ml/30 g) sour cream
2 to 3 tbsp (30 to 45 ml) water
1 tbsp (15 ml) chopped fresh parsley
1 tsp (5 ml) chopped fresh marjoram, or ½ tsp (2 ml) dried
Freshly ground pepper
½ cup (50 ml) milk
Pinch turmeric
1 to 2 tbsp (15 to 30 ml) caraway seeds


Method

Peel the potato and press through a ricer or grate finely. Combine with the flour, quark, margarine, egg, nutmeg and salt. Knead until smooth. Cover and leave in a cool place to rest for at least 30 minutes.

Slice the green onions and finely dice the ham. Slightly heat the margarine, stir in the green onions and ham, and brown on medium heat for 1 to 2 minutes. Sprinkle with the flour and cook 1 minute more. Remove from heat, stir in the sour cream, water, parsley, marjoram and a little pepper. Set aside.

Thoroughly knead the dough. Roll out to form a 12- x 16-inch (30 x 40 cm) rectangle and cut 12 squares. Place a little of the ham mixture in the center of each. Starting in one corner, roll up and turn the outer ends to form a crescent. Place seam side down on a baking sheet covered with parchment paper.

Preheat the oven to 400°F (200°C). Whisk the milk and turmeric, brush on the crescents and sprinkle with caraway. Bake for 15 minutes, or until golden.
