Savory Galette

Ingredients

FOR THE CRUST:

1⅔ cups (400 ml/200 g) coarsely ground whole wheat flour
Salt
1(¼ oz/7 g/2¼ teaspoons) envelope active dry yeast
½ cup (125 ml) lukewarm milk

FOR THE TOPPING:

3½ oz (100 g) rindless cooked ham
1 tablespoon (15 ml) olive oil
2 green (spring) onions
1 clove garlic
5 cups (1.25 l) sliced Savoy or Chinese (Napa) cabbage
2 tomatoes
Freshly ground pepper
Freshly grated nutmeg
4 sprigs fresh basil
2 tablespoons (30 ml/30 g) sour cream
½ cup (125 ml/60 g) grated provolone or Gouda cheese

Method

Sift the flour into a large bowl and add a little salt. Sprinkle the yeast over the milk and let stand 10 minutes, or until frothy. Gradually stir into the flour. Knead until smooth. Cover and leave the dough to rise in a warm place for 30 minutes.

Cut the ham into ¾ -inch (2 cm) strips. Slice the green onions and chop the garlic. Heat the oil, stir in onions and garlic, and gently sauté until translucent. Score, blanch, peel and dice the tomatoes and stir in. Stir in the cabbage and season with salt. Cook, uncovered, for 5 minutes, until most of the liquid has evaporated. Grate in pepper and nutmeg. Chop the basil and stir in with the sour cream.

Preheat the oven to 350°F (180°C). Oil a 10-inch (25 cm) springform pan. Knead the dough, roll out and place in the pan to cover the bottom and a bit up the sides. Fill with the topping and sprinkle with cheese. Leave to rise for 10 minutes, then bake for 30 minutes.

Per serving:- approx. 380 calories 21 g protein, 18 g fat, 33 g carbohydrates
