Mango Fool With Mango Sauce
Mango and lime is a truly wonderful marriage of flavours. This refreshing dessert is especially welcome after a heavy meal.
Ingredients
2 egg yolks
25g (1oz) caster sugar
2 tablespoons Kirsch (optional)
Juice of 2 limes
175ml (6fl oz) low-fat Greek yogurt
2 mangoes, peeled, stoned and puréed

Method
Place a bowl over a saucepan of simmering water, add the egg yolks and sugar and beat until the mixture has thickened and trebled in volume, this should take about 10 minutes. Remove the bowl and sit it over ice. Whisk until cold, then place in the refrigerator.
When cool, add half the Kirsch (if using) and half the lime juice. In a separate bowl, whip the yogurt lightly and fold into two-thirds of the mango puree. Fold this into the egg mix. Pour into glasses or bowls and refrigerate.
Whisk the remaining Kirsch (if using), line juice and mango puree together and pour over the mango fool to serve.
