Fruit Salad With Kiwi Juices
Here’s a fruit salad with a twist, the sweet, slightly spicy wine complements the fruits admirably. Something for the summer: light, fruity and very moreish.
Ingredients
300ml (10fl oz) Gerwurztraminer wine
2 tablespoons liquid honey
6 kiwi fruit, peeled
2 Granny Smith apples, peeled and cored
2 tablespoons lemon juice
1 mango, peeled, stoned and diced
10 large strawberries, hulled and halved
˝ pineapple, peeled, cored, ‘Eyes’ removed and cubed

Method
Bring the wine and honey to the boil and then allow to cool to room temperature.
In a food processor, blend 4 of the kiwi fruit with the wine and honey mix. If you don't like the seeds of kiwi fruit, pass through a fine sieve. Cut each of the remaining kiwi into 8 wedges.
Dice the apples and toss with the lemon juice. Combine with the other fruits.
Arrange the fruit salad in the centre of your bowl, ladle the kiwi juice around them, and chill until ready to eat. Serve with the kiwi wedges.
