Mango, Tomato And Red Onion Salad
This salad makes an appetizing starter; the under-ripe mango has a subtle sweetness and the flavour blends well with the tomato.
Ingredients
1 firm under-ripe mango
2 large tomatoes or 1 beefsteak tomato, sliced
½ red onion, sliced into rings
½ cucumber, peeled and thinly sliced
30ml/2 tbsp sunflower or vegetable oil 15ml/1 tbsp lemon juice
1 garlic clove, crushed
2.5ml/ ½ tsp hot pepper sauce
Sugar, to taste
Salt and black pepper
Snipped chives, to garnish

Serves: 4
Method
Cut away two thick slices either side of the mango stone and cut into slices.
Peel the skin from the slices.
Arrange the mango, tomato, onion and cucumber slices on a large serving plate.
Blend the oil, lemon juice, garlic, hot pepper sauce, salt and black pepper in a blender or food processor, or place in a small jar and shake vigorously. Add a pinch of sugar to taste and mix again.
Pour the dressing over the salad and garnish with snipped chives.
