Boiled Lamb

Ingredients
2 kg lamb meat
4 carrots
6 potatoes
2 celeries
200 gr. shallots
10 cups water salt
1 pinch parsley, chopped

Method
Clean the carrots, slice into 4 pieces vertically, 3 cm each. Peel the tomatoes, cut into 4. Peel the celery and cut into 8 pieces. Place the meat in a saucepan cover with water and boil over strong heat. When boiled, remove from heat, drain, wash with cold water and put into another pan. Add salt and water and cook for 30 minutes over medium heat. Add the potatoes and other vegetables, cook for 15 more minutes, add the parsley and serve. Squash (zucchini) may be added if desired.
