"Ladies Thigh" Croquettes

Ingredients

1 kg minced mutton
4 onions
1 tea cup rice
1 cup water
1 bunch parsley
6 eggs
Salt
1 teaspoon pepper
1 cup flour
2 cups sunflower oil

Method

Skin the onions and chop finely, boil with ⅔ of the minced meat for 20 minutes with the lid closed, stirring occasionally, until the water evaporates.


Wash and drain the rice and boil in a separate pan with ¼ cups of water until the rice is tender. Clean and finely chop the parsley. Mix thoroughly the rice, the cooked and uncooked minced meat, one egg, parsley, salt and pepper.


Divide the mixture into oval shaped flat balls and roll in flour. Mix the remaining eggs separately. Fry the oil, roll the meat balls in the egg mixture and fry in the hot oil. Drain on paper towels and serve hot.
