Green Beans In Olive Oil

Ingredients

1.5 kg green beans
1 cup olive oil
3 tomatoes, big
3 onions, big
3 cups water
Salt
2 teaspoons sugar
Wax paper

Details

Serves: 10


Method

Remove the tops, bottoms and string the beans, then wash. Peel the tomatoes, remove the seeds and chop. Melt the oil in a medium size frying pan and fry the tomatoes.


Stir frequently to mash the tomatoes. Arrange the green beans in a medium sized sauce pan. Place the skinned whole onions in the middle of the pan. Simmer the tomato and oil and add on top.


Add the salt, sugar and water and top with wet wax paper. Put a plate above the paper. Close the lid, bring to a boil and simmer for 1 hour. Serve cold.
