Mayonaisse

Ingredients
2 cups of good olive oil
2 egg yolks
1 teaspoonful of mustard powder
The juice of one large lemon
Salt
White pepper
Method
Beat together the egg yolks, the mustard powder, the salt, the pepper and a small quantity of the lemon juice. Blending the mixture constantly, add the oil drop by drop and when you have poured in the last of it, pour the rest of the lemon in too, also a little at time, constantly beating the mixture.
Variation:-
For a more rapid preparation of the mayonaisse, mix 2 level soupspoonfuls of cornflour, wait to allow it to cool and add the mustard powder, the egg yolks and the rest of the ingredients, adding more oil and lemon if wished. This mixture will thicken sooner if the oil is poured faster.
