Ingredients
2 kilos of lambs' intestines
1 cup of olive oil
2 soupspoonfuls of butter
3 lemons
Rigani and allspice
Salt, pepper

Method
Wash intestines very well, turning them inside-out. Salt them and rinse with lemon juice. Rinse again with clear water. Next, scald them well, then put them in a bowl. Add the allspice, the rigani and salt and pepper and mix together well.
After having separated the intestines into 4 lengths, plait each, ensuring that it has not been plaited too tightly. Place the plait in a pan. Add the oil and butter together with 2 glasses of water. Cook on a moderate heat for approximately 1 hour or until a sauce has formed.
Variation:-
You can make gardośmba with lamb sweetbreads by plaiting the intestines, not too tightly, around the sweetbreads.
