Cod Croquettes
( Bakaliáros Kroketákia )
1 portion (4 croquettes) calories: 680. Cooking time: 15 minutes.
Ingredients
˝ kilo of filleted cod
˝ kilo of mashed potato
˝ cup of milk
1 cup of grated cheese
1 soupspoonful of butter
3 eggs
Salt, breadcrumbs, pepper and oil

Method
Break the fish into pieces with a fork, then put into a frying pan with the mashed potatoes, butter, milk and pepper.
Mix ingredients over a low heat for a short while until mixture thickens. Then remove from heat. Add one egg and one egg yolk and the cheese. Place in the fridge for 2-3 hours(covered). Then remove, form into croquettes and flour each one.
In separate bowl, beat 1 egg and one white of egg with a teaspoonful of oil. Dip each croquette into this mixture, then roll each one in the breadcrumbs.
Fry in very hot oil. Serve hot, with garlic sauce garnished with sprigs of parsley and slices of lemon.
Variation:-
Nutmeg and finely chopped parsley can be added to the mixture.
