Baked Haricot Beans
( Gígantes Plakí )

Ingredients
˝ kilo of large dried haricot beans
ľ cup of olive oil
1 medium-sized onion
3 cloves of garlic, chopped
3 ripe (or tinned) tomatoes
Parsley, finely chopped
Salt, pepper

Method
Having soaked the beans overnight, change the water and boil till soft. Then drain and allow to dry for a while.
Put the oil into a frying pan with chopped onion and garlic. If using fresh tomatoes, cut as fine as possible; add these to the pan along with the parsley.
Bring the ingredients to the boil. Put the beans into an oven dish, pour over them the boiled sauce and bake in oven for three quarters of an hour, or until cooked.
Variation:-
If you wish, you can put all the ingredients into the roasting tin without having cooked them in the above manner; however, it takes longer this way.
